The "St. St. Constantine and Elena" Foundation announces the start of the initiative "Youth Culinary Academy in the resort of St. St. Constantine and Elena".
The initiative aims to help young people, aged 15 to 29, who are interested in pursuing a culinary career, to gain knowledge, skills, and practical experience in a real working environment, to learn from established and already established chefs-cooks and professionals who have worked in some of the most popular restaurants and hotel chains in Europe and Bulgaria.
The target groups of the project are young people aged 15 to 29 who have an interest in their career development to continue in the field of culinary art:
- students from general education schools in Varna who, after completing their secondary education, want to direct their professional realization in the field of culinary arts;
- students from vocational high schools in Varna;
- students from colleges and universities in the Varna area;
- young people aged 15 to 29 who want to develop their skills in the kitchen and work in this field, including young entrepreneurs who want to develop a similar business;
- youth and girls in a disadvantaged position with an interest in the culinary profession, from the family-type accommodation centers "Izgrev" and "Drugarche" in Varna - institutions that are traditionally included in all projects and initiatives of the "St. St. Constantine and Elena".
The project envisages the implementation of a total of 8 training and theoretical modules on various topics. For greater efficiency in the practical part, the participants will be divided into 3 groups of 15 people each.
The 8 modules will be implemented this October at the Professional High School of Tourism "Professor Dr. Assen Zlatarov". After completing the program, each participant will receive a certificate of completed training from chefs Stanislav Petkov - head chef of the "Monty" restaurant and Svetoslav Petrov - head chef of the "Kampai" restaurant. The most successful participants can be invited to work.
ACTIVITY 1 - THEORETICAL TRAINING MODULE - “The Profession of Cook”
Date of implementation: October 2, 2023
Expected results: This module will be led by professional chefs in restaurants in the resort of St. St. Constantine and Elena and will introduce participants to the profession of "Cook", the necessary skills, basic duties, professional qualification, regulatory framework, sanitary and hygienic requirements, etc. Will be realized in a real working environment.
ACTIVITY 2 - THEORETICAL TRAINING MODULE - “Technologies and Equipment in the Kitchen”
Date of implementation: October 3, 2023
Expected results: This module will be led by professional chefs in restaurants in the resort of St. St. Constantine and Elena and will introduce participants to the equipment in professional kitchens, various techniques for cold and thermal processing of food, etc. Will be realized in a real working environment.
ACTIVITY 3 - THEORETICAL TRAINING MODULE - “Basic Characteristics of Mediterranean Cuisine”
Date of implementation: October 4, 2023
Expected results: This module will be led by professional chefs in restaurants in the resort of St. St. Constantine and Elena and will introduce participants to the topic of Mediterranean culinary specialties, authentic recipes used for preparing various types of fish, seafood, etc. Will be realized in a real working environment. Participants will learn more information firsthand and how to make author's recipes.
ACTIVITY 4 - THEORETICAL TRAINING MODULE - “Secrets of Asian Cuisine”
Date of implementation: October 4, 2023
Expected results: This module will be led by Chef Svetoslav Petrov - head chef of the "Kampai" restaurant in Aquahouse Hotel & SPA. The participants will be introduced to the history of pan-Asian cuisine, which is becoming increasingly popular in Europe, with a combination of techniques, Asian products and spices. Pan-Asian cuisine is close to Chef Petrov's philosophy - to cook without waste, to invest every part of the products, to experiment with new techniques and authentic recipes.
ACTIVITY 5 - PRACTICAL TRAINING MODULE – Workshop “How to make homemade pasta”
Date of implementation: October 9, 2023
Expected results: The workshop will be led by professional chefs. Participants will be introduced to techniques and recipes for making homemade pasta, will be able to try themselves to knead the dough, to cut the pasta.
ACTIVITY 6 - PRACTICAL TRAINING MODULE - Workshop “How to make sushi”
Date of implementation: October 9, 2023
Expected results: This module will be led by Chef Svetoslav Petrov - head chef of the "Kampai" restaurant in Aquahouse Hotel & SPA. Participants will gain practical experience with basic techniques for making sushi, combination and combinations with sauces, spices, arrangement, presentation of the dish.
ACTIVITY 7 - PRACTICAL TRAINING MODULE – Workshop “Be a Kitchen Assistant”
Date of implementation: October 10, 2023
Expected results: This module will give participants in the final part of the project the opportunity to be kitchen assistants during the active tourist season. A great opportunity to participate directly in the preparation of breakfast, lunch and dinner for guests at the hotel and to learn more about teamwork, working under pressure, meeting deadlines, coordination between different units, taking direct responsibilities in completing specific tasks.
ACTIVITY 8 - MODULE "COMPETITION" - "Who will be the fastest" with prizes for the best performing participants
Date of implementation: October 11, 2023
Expected results: The competitions will be the final part of the project. The best-performing participants will receive awards, and all will receive certificates of completed training in the respective modules.
